Comprised of posters, placemats, cookbooks, a screensaver and large-scale murals, the NMS system uses 88 colors to represent different fruits and vegetables. Using actual food colors for the chart, the artist photographed fruits and vegetables from a local farmers’ market, scanned the images into his computer and then used Photoshop to extract the true 88 colors from the different fruits and veggies.

“The shades of color displayed at the farmers’ markets are more than skin deep, reflecting the inner potential of every fruit and vegetable; intense colors might even be called nature’s nutrition labels,” explains the artists’ website. “They get many of their colors from phytonutrients, compounds that play key roles in health and reduce the risk of heart disease and cancer.”

The NMS chart serves as colorful reminder to eat a varied healthy diet.
